Maple Rosemary Skewered Lamb Recipe

This flavorful skewered lamb recipe is flavorful and features a beautiful presentation. Served on a charred and grilled pita, and topped with a fresh, yogurt, cucumber, scallion and mint dressing, these rosemary lamb skewers are fresh take on preparing sirloin lamb chops that will have your guests clamoring for more.

Prep Time: About 35 minutes (and 4+ hours to marinade)
Cook time: About 15 minutes
Yield: 12 Servings

Ingredients:
  • 4-1/2 pounds lamb sirloin chops, cut into 2 inch cubes
  • 1/2 cup of olive oil
  • 1/4 cup of maple syrup
  • 1/4 cup fresh rosemary, finely chopped
  • 2 tablespoons, crushed coriander seeds
  • 2 tablesppons, crushed mustard seeds
  • 2 teaspoons, cracked black pepper
  • 1-1/2 teaspoons, kosher salt or sea salt
  • 24 fresh rosemary skewers/stems (6 inches) soaked in water (or substitute bamboo skewers)
  • 2 cups greek yogurt
  • 1-1/2 cups of cucumber, peeled, seeded, and diced
  • 1 cup plum tomatoes, diced
  • 1/2 cup scallions, minced
  • 2 tablesppons fresh mint, minced
  • 2 tablespoons of maple syrup
  • 12 6-inch pitas, grilled
  • 1/4 cup fresh parsley, minced

Cooking Instructions:
  1. In a bowl, combine the oil, syrup, rosemary, coriander, fennel, mustard, pepper, and salt. Place cubed lamb sirloin into bowl, and toss well to coat evenly with marinade. Cover and refrigerate at least 4 hours (overnight if possible). Turn meat a few times to make sure all sides are exposed to marinade.
  2. Thread 3-4 marinated chunks of lamb onto each rosemary herb or bamboo skewer (about 3 ounces per skewer), securing them well so you don't lose them during cooking. Place skewers on a large sheet pan and cover until you are ready to cook them.
  3. Mix greek yogurt, cucumber, tomatoes, scallions, mint, and maple syrup in a bowl. Cover and refrigerate until serving.
  4. To Serve: Grill 2 skewers of lamb per serving, about 2-3 minutes per side (cooking to desired doneness). Grill pita bread while grilling lamb. Once done, place lamb on grilled pita bread and spoon 1/3 cup of yogurt sauce over the top of the lamb. Sprinkle with parsley and serve.

One of my favorite herbs to pair with lamb is rosemary -- the flavors compliment one another so well! I love the way the light, fresh, yogurt dressing and the crispy grilled pita combine with this marinated, grilled sirloin. While there's some prep-work involved ahead of time, you can prepare everything a day in advance and impress your friends and families with this unique and flavorful skewered lamb dish which is perfectly suited to warm summer outdoor dining.

​If I'm honest, this has become one of my favorite summertime dishes because it's light, unique, delicious, and it's easy to eat during a cocktail party or family style when gathered around a picnic table with family and friends.
